Look at the level 2 floor plan. Not much more to really explain.
-
Not extremely hard to do, but VERY finicky.
-
Maybe it is the window treatment you are using, causing trouble? Delete the window treatment, and move the window into the correct position. If you open the window dialog box, in the scroll down window box you can choose "louvers".

No where, did I mention a flat ceiling. This is all a guessing game based on your images. The roof pitch, the roof wall settings, and the ceiling height settings are what is important. Posting the PLAN FILE, would help.
-
Try this.

I do not understand what you want, from looking at your drawings, but I think the "room within a room" is the best method to use, because it will create the framing in the attic, that you want.
-
I have figured out how to put a shed roof over the circular stairwell, using auto rebuild roof. 1. Delete the roof over the right half of the 2nd floor stairwell. 2. Create a 3rd floor blank plan (this will prevent interference with the existing roof). 3. Turn on floor reference display, and create a 3rd floor invisible room, shown in the image.

When you refer to the roof ridge "breaking" you need to be more clear what you are referring to. If you are meaning that raised section of the roof, , do you not remember how to adjust that?
-
??? You can see the image I posted showing the position of the 2 walls (orange & blue). Why, oh why, are you not following that?
-
Look at this example, and pay attention to the 2 room divider walls (orange & blue), and their position, and what the 3D image looks like. Also pay attention to the dashed green roof lines. Play with that until you get it right.

When you run into a problem, you should close the file without saving it. That way, you can try again, with the fix. The software is not the problem, it is an operator problem. Pro will cause the same situation. You need to deal with the current issues before trying to jump onto another area. Pay attention that the long room divider wall is still connecting to the front door wall, to continue to create the porch room.
-
Try playing with this. And pay VERY close attention to that roof overhang as you move those walls. This will help to restore the porch width.
-
Do you not understand, the software will NOT allow a roof edge to cut into an exterior wall. It will take a chunk out of the exterior wall. It is what it is. Moving the room divider wall, did NOT move the foundation wall below. Move the foundation wall (level 0) back under the room divider wall, and the invasive roof on the porch slab will go away. Moving the room divider wall has made the porch slab skinnier, so use a soffit or box shape to create a fake slab, that is the correct width of the porch.
-
Turn the roof display lines back ON. Look at the green dashed lines of the roof overhang on the half-wall. MOVE the wall AWAY from the circular wall, so that the roof lines do NOT intersect the circular wall. It should then become clear to you what I meant about your measurements.
-
You need to re-read the last post on page 2.
-
What's the problem? And... I do not see a flat roof anywhere on the real house.
-
Roofs build over "rooms". I do not see a porch "room" on the software pic.
-
Also, the roof overhang of the half wall on the porch (1st floor) is cutting into the circular wall. You need to revise some measurements, and move the wall. That should be a room divider wall... NOT a half wall.
-
Take a closer look at the image you posted. You still have a problem on the gable wall next to the stairwell. You added something you shouldn't have.
-
I think the only way with Suite, that you will get a shed roof over that circular wall, is to "fudge" it, using carefully sized and placed wedge shapes. It doesn't look perfect, but it is presentable from a distance.
-
Try these settings and see if they work.

When you say, "File>Download sample plans", Are you referring to Sample Plans & Renderings on the Home Designer website, under User Center? I count 21 plans there, and some of them are even decorated.
-
1. Rebuild foundation, and don't alter it. 2. Turn ON Auto Rebuild Roof. 3. Under the toolbar EDIT, Reset defaults (all floors roof directives in walls). With the floor plan the ACTIVE window > TOOLBAR>Tools>Display. Uncheck dimensions auto and dimensions manual. Uncheck roof planes, roof baselines. Uncheck room labels, room interior area and dimensions and standard area. Lastly, on the toolbar under VIEW, uncheck reference Grid. The plan should now look very uncluttered. Do a 3d perspective view, and tile it vertically. Select exterior walls you know are gable walls, and set them. Pay attention to what changes in the 3D view.

Getting everything reset in the plan, and cleaning up all the clutter, will help help get you back on track with the plan. I can help.
