Except for the roof, that looks like standard construction -- walls with windows.
For the roof, change the structure to be thin like the glass and materials to Opening No Material and glass.Use roof framing for the battens. Build the roof thicker, build framing, then build the roof thinner so the framing protrudes.

Do you have a representative picture of what you are trying to model.

Materials Panel.
Set the Soffit to Opening No Material.

I noticed that when you cut your section, it showed trusses and joists. Is that something that Pro will do? Am I just missing the settings?
I think you need to spend some dedicated time watching videos/reading articles/documentation. Don't know what you use the software for, but if it's for business, it will make you more efficient, and you will probably learn things you did not know about.
And if you are still using 2018, consider an upgrade when 2022 comes out next year. Lots of new features introduced over several years.
I was using Premier in the video, but yes, Pro will show trusses and joists.

Look under Materials. You cannot remove, only change.

Is there anything possible
What tool do you have available that would create an arched opening? Hint -- they are all over the house.

Which columns are you asking about?

Then I imagine it's not an option. You can do it in Pro.

It looks like the roof is building to the rail.
Maybe you want the left side gable to extend to the front corner? Select the railing and change to Full Gable.

I know of no documentation other than what's in Help. I've never seen this option used, or even asked about.
I believe there is no point to point functionality, you place a point in Layout and the center of the Layout Box left edge will snap to the point.

You can import CAD Blocks made in Chief into the library, but you cannot use them in the program.

Except you cannot block CAD.

That's not even "kinda" a solution.

Generally, the display of things is controlled by Layers.

I would like the final product to be a single 2x12 ceiling joist on top of the beams, with open rafters above, so an open triangle with no webbing.
Sounds like a truss. Have you considered this?

Open a roof plane, under Structure.

roof framing shows up in full perspective framing overview, but not in full perspective view.
Each view has its own set of display options. Check to set things to display.

Simply changing defaults does not change existing roof planes. Open them and change.

Reasoning for not using auto built ones?

And it's helpful to break up your post with a few blank lines -- make it easier to identify each question/problem.

I did this in 2 minutes.
Try working each problem by itself, and do so in a new, simple plan. Once you are successful, start working in the real plan.
